Goalong Distillery combines traditional whiskey craftsmanship with modern control technology, featuring a pot still for single malt whiskey and a continuous still for grain whiskey.
Nestled within the Liuyang River canyon basin, Goalong Distillery is surrounded by towering mountains. Located about 2.5 kilometers to its south flows the Liuyang River, while the Luoxiao Range stretches to the north and the Lianyun Range to the south, culminating in the majestic Dawei Mountain, towering at 1,608 meters. With a forest cover of 99%, the locale features seasonal mists seeping through ancient shale, imbuing the water with a pure, natural sweetness. At 28°N latitude, under the snowy winter peaks, we've discovered the perfect whiskey terroir—the very source of the Liuyang River. Benefiting from 1,680 mm of annual rainfall and an abundance of soft water, this area is an unparalleled destination for whiskey production.
Dawei Mountain embodies inclusivity, where we bask in sunlight, caress the lake waters, inhale the crisp air, and embrace every aspect of nature. Our whiskey, shaped by both careful ingredient selection and meticulous process management within this setting, exhibit a distinct character unique to our distillery. The region's marked four seasons and judiciously timed fermentation processes, suited to the mild climate, yield new-make spirits with a full-bodied and opulent flavor profile.
Goalong Distillary adopts a 5-ton small still, matched with a larger shell and tube condenser, with the Lyne Arm slightly tilted upwards. The material of the still innovatively uses a combination of copper and stainless steel, and is heated with thermal oil for distillation. The heating temperature can be controlled to above 140 degrees Celsius, resulting in a more intense Maillard reaction, which can give the new make a burnt aroma of toasted bread. Its taste is sweet, elegant, and has a rich malt aroma, as well as rose and green apple fruit aromas.
Goalong's cellar is oriented to divide into four distinct barrel-aging zones, each embodying the seasons of Spring, Summer, Autumn, and Winter. It features 5-tiered steel racks, designed to accommodate a total of 6,666 casks. There are more than 20 different Casks in the cellar: Bourbon Cask, Sherry Cask, Mizunara Cask, various Wine Cask (Sauvignon blanc Cask, Chardonnay Cask, Port Cask, Bordeaux Wine Cask, Burgundy Wine Cask and others), and our signature barrel-shaped Chinese brandy Cask.
The Goalong R&D laboratory is equipped with 500-liter R&D experimental equipment, integrating yeast research and small still testers, and can meet the R&D needs of international spirits making such as single malt whiskey and single grain whiskey.
To minimize environmental impact, Goalong Distillery has implemented a series of measures, establishing its own eco-system. In the whisky distillation process, substantial heat generated is harnessed by heat exchangers to preheat materials like mash, thereby conserving energy. Wastewater discharge adheres strictly to environmental standards and is recycled wherever possible, treated to remove organics and minerals for reuse in production or cleaning. CO2 emissions from fermentation are captured via specialized equipment and repurposed in other product production. Spent grain from saccharification is fed to Angus cattle at partnering farms; their manure is processed at an organic fertilizer plant, which nurtures the glutinous rice experimental fields—key ingredient for Goalong's grain whiskey. This cycle completes the self-sustaining Goalong eco-system.
